250g wheatmeal biscuits
150g butter ( melted)
4 tbsp custard powder
1/2 cup water
400g can sweetened condensed milk
1 cup warm water
1 beaten egg
3 tbsp coffee liqueur
2 tbsp desiccated coconut
3/4 cup whipped cream
fruits for decoration ( kiwi, strawbery, oranges, etc..)
1. Finely crush about 250g wheatmeal biscuits and place in a bowl. Add 150g melted butter, mix well. PRess onto the base and sides of a well greased 20cm diameter , 6.5cm deep spring form pan or deep 20cm flan ring. Chill 2 hours.
2. Blend 4 tbsp custard powder with 1/2 cup water ina heavy saucepan. Beat in one 400g can sweetened condensed milk, one cup warm water and one beaten egg. Stir constantly over low heat, until custard boils. Misture will be very thick. Remove from heat and beat vigorously until smooth. Cool slightly.
3. Whisk in 3 tbsp coffee liqueur, 2 tbsp desccated coconut and 3/4 cup whipped cream. Spoon the mixture into chilled crumb crust. Place in refrigerator . Chill 3-4 hours or overnight.
4. Decorate with fruits and cream
