Ingredients:
350g chicken drumstick
120g pickled ginger
Marinate:
salt , sugar, light soya sauce, curry power, water , cornstarch.
Sauce (mix well)
150ml pickle ginger juice
2 tbs pinneapple jam
1/4 tsp salt
1/2 tbp fresh lemon juice
Method:
1. Rinse the chicken drumstick and cut into pieces. Season with marinate, mix well. Marinate for about 30 min. Deep fry into hot oil until golden brown. Remove and drained.
2. Heat up a little oil in the preheated wok, pour in sauce mixture and bring to a boil. Then, place in pickle ginger dices and prefried chicken pieces, stir fry until well coated with the sauce or slightly dry. Dish out serve with hot rice. |
